How To Get The Table

Every hard restaurant has a release pattern. Most of them are public if you look.

Every hard restaurant has a release pattern. Most of them are public if you look.

We spend most of the year booking the same handful of weeks, and the pattern repeats: the people who travel best are the ones who decide early and then stop managing the detail. What follows is what we have learned holding those dates on behalf of clients season after season.

The first thing worth saying is that availability is not the same as access. A room can be bookable and still be the wrong room; a ticket can be on sale and still put you in the wrong part of the stadium. The value of a desk like ours is knowing the difference before you have paid for it.

The second is timing. Almost every complaint we hear about a trip traces back to a decision made three weeks before departure that should have been made three months before. Restaurants fill before hotels. Hotels fill before flights. Work backwards from the hardest booking, not the easiest.

And the last is restraint. The itineraries our clients repeat are not the full ones. They are the ones with a day left open in the middle, and a host on the end of a phone in case that day turns into something.
